Johny Bread

(Pain de Johny)

Ingrédients :

1 cup flour
1 cup yellow corn meal
1/4 cup sugar
4 teaspoons baking powder
3/4 teaspoons salt
2 eggs 1 cup milk 1/4 cup cooking oil 

Stir together the dry ingredients. Add the eggs, milk and cooking oil. Stir until mixture is smooth (don't over beat it - doing so will take out some of the texture). Let sit about 5 minutes. Then pour into a greased 9X9 inch baking pan. Bake in 425 degree oven for about 20 minutes. 

Corn bread may also be cooked as muffins or in a bread pan. 

Corn bread was commonly called "Johny Bread" after the Civil War because of its associations with the Southern region of the united states. Because of the preserving qualities of dried ground corn, it was a common commodity in the 1800s and especially useful to have around during the winter months when fresh vegetables and fruits were scarce.
